No paper towels available at back hand washing station (near chest freezer).
Corrective Action(s):
Refill paper towel dispenser. Ensure all hand washing stations are fully equipped with liquid soap, paper towels and hot/cold running water at all times.

Observation:
- A few containers of food in walk-in cooler were found to be uncovered at the time of inspection.
- A few prepackaged items in walk-in freezer had fallen onto the freezer ground due to over stuffing of containers.
Corrective Action(s):
- Ensure all food items are protected from contamination with a food grade cover.
- Pick up all fallen prepackaged food items from the walk-in freezer floor and place them on the shelf in an organized manner.

Routine Inspection:
Hand washing stations near ice machine and in front prep area fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- All coolers maintained at or below 4 degrees Celsius.
- All freezers maintained at or below -18 degrees Celsius.
- All hot holding units maintained above 60 degrees Celsius.
Bleach sanitizer in spray bottle = 200 ppm.
Low temperature dishwasher sanitizing with 50 ppm chlorine.
Ice machine clean. Ice scoop stored in designated container.
Pest control company comes in monthly.
No signs of pest activity at the time of inspection.
No foods being cooled at the time of inspection. Remember to cool foods in the following manner:
- From 60 degrees Celsius to 20 degrees Celsius within 2 hours (use ice water bath, cooling wand, or separate into smaller portions and in shallow pans), then
- From 20 degrees Celsius to 4 degrees Celsius within next 4 hours (in cooler at 4 degrees Celsius).
General sanitation of premises satisfactory.
