Plywood ceiling above double prep sink area needs to be sealed. Corrective Action(s): Re-surface or replace the wooden shelves in the glassware washer/server area so they are in good condition, impervious to moisture, and easy to clean. Follow up inspection. Fish in packaging is being defrosted in cold running water - good. Tongs in cooking line area are being stored in ice water and are put through dishwasher every hour - post instructions as part of your sanitation plan. Cutting boards go through dishwasher. Line cutting boards are for plating only. Chlorine sanitizer is in a labelled spray bottle. Discussed procedures. Wiping cloths are to be sanitized. Hamburger is being defrosted in cooler. Expo pass through area that was a painted wooden surface has been replaced with stainless steel - good. Keep staff washroom door shut.
