Observation (CORRECTED DURING INSPECTION): Multiple containers of pooled eggs observed in the cooler beside the stove. Operator indicated the pooled eggs are for omelettes and is made from fresh shelled eggs observed at bottom department of cooler. Container size is larger than 1 serving size.
Correction: Pooled eggs should be made for single dish prepared for immediate consumption by one person. Ensure pooled eggs are made to serve and not stored in cooler for later use. Discard the pooled eggs.

Observation (CORRECTED DURING INSPECTION): Towels for wiping surfaces observed to be lying on tables. Towel is slightly wet to touch and look slightly soiled. Towels observed in kitchen area and beside espresso machine. Operator indicated that the towel is used for wiping the surface with the espresso stomp.

Observation: 1. Raw chicken observed to be placed above vegetables in walk-in cooler
2. Squid ink bread and fresh bread loaves observed at coffee bar counter for sale with no packaging or cover. It is not protected from contamination, public can easily have access to it.
3. Pin board observed above wooden table in kitchen area with pins inserted, potential physical contamination

2. Ensure all bakery items for sale at counter is protected from contamination via packaging or a physical barrier to public
