Observation (CORRECTED DURING INSPECTION): Bleach sanitizing solution in spray bottle and sanitizer pail was too strong and bleached out the test strip.
Corrective Action(s): Operator diluted bleach solution to 100 ppm at time of inspection. Ensure to mix only 1/2 tsp of bleach per litre of water for proper concentrations.

Observation: Insides and door seals of deli display coolers require cleaning - accumulation of food debris noted.

Comments

- Food Safety Plans available for review.
- Hand washing sinks properly supplied with hot/cold running water, liquid soap, and paper towels.
- Bleach sanitizing solution too strong. See violation code 209 above. Mix only 1/2 tsp of bleach per litre of water for proper concentrations. Do not mix with soap.
- Quats sanitizing solution also available in spray bottles for use. Measured 200 ppm.
- Triple-sink for manual warewashing maintained in sanitary conditions. Reviewed manual warewashing procedures at time of inspection. **Ensure sanitizing sink is filled to be able to fully submerge all equipment to be manually washed.
- Walk-in cooler and deli/display coolers measured at 4C or colder
- Walk-in freezer and display/retail freezers measured at -18C or colder
- Equipment maintained in sanitary conditions
- General sanitation satisfactory at time of inspection, aside from deli display coolers (See violation code 306 above).
- No signs of pest activity noted
