Observation: Numerous mouse droppings found throughout premise, mostly in back storage hallway.
Corrective Action(s): Do a detailed clean of harder to reach areas of floors where mouse droppings have been found. Due: Jan 30, 2024
Check and reclean all areas where new mouse droppings are found. Recommend getting buckets in hall storage area up on dollies like blue bins are.

Observation: Pest control company currently in once per week
1) Hole observed on outside of back door at the base of the hinge side of the door where mice could be getting in
2) Weather stripping bent outwards on the exterior side of the back door exposing a gap under the door
Corrective Action(s): 1&2) Plug hole and repair weather stripping to prevent pest entry

Note: Observed several gaps in seal on walk in cooler door which could allow for cold air to escape. Recommend replacing this.
- Continue to work with pest control company, following all their recommendations to address pests.

General observations:
√ Coolers ≤4°C, Freezers ≤ -18°C, Hot holding ≥60°C
√ Good food storage practices noted such meats stored separate/below all other foods
√ Food up off floor ≥6”, good stock rotation noted
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Quats sanitizer available at 200ppm in spray bottles. Sanitizer comes in premixed from manufacturer
√ High temperature dishwasher sanitizing at ≥71°C
√ Two compartment sink stocked with dish soap, sanitizer, hot and cold running water
√ Equipment appeared to be in good working order
√ General day to day sanitation is satisfactory
√ Staff with FoodSafe (or equivalent) present.
√ No concerns with staff hygiene or food handling noted during inspection
