Observation (CORRECTED DURING INSPECTION): Plastic jug used to scoop ice was stored inside the ice machine in direct contact with the ice.
Corrective Action(s): Remove the jug from the ice machine. Do not store any scoop or jug inside the ice machine as this may contaminate the ice.

Comments

Routine inspection:
- Coolers (Stand-up, under the counter) maintained at 4C or less.
- Under the counter freezer maintained at -18C.
- Tapioca pearls time tracked and will be discarded every 4 hours.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- High temperature dishwasher reached 71C at plate level after 3 runs. Recommend to monitor and contact the technician to increase the temperature.
- 100 ppm bleach sanitizer available in buckets. Ensure to educate the staff on the amount of bleach mixed with water.
- Equipment maintained in sanitary conditions.
- General sanitation excellent.
- No pest activities observed at the time.
