Staff did not understand the proper procedure of manual dishwashing with 2 compartment sink 2. Chlorine sanitizer in spray bottle has no chlorine residual detected Corrective Action(s): 1. Informed the staff the all dishware must be wash, rinse, and sanitize with at least 50 ppm of chlorine by fully immerse all dishware in the sanitizer solution for at least 2 mins. Please re-wash all the dishware to ensure all dishware are properly sanitized. 2. Staff immediately re-make a 100 ppm chlorine solution. Please re-sanitize all food contact surface with the new solution to ensure all food contact surfaces are properly sanitized. Violation Score: 25
