Routine inspection conducted and the following were noted at the time of inspection:
All cooler units less than or equal to 4C and equipped with thermometer.
Walk-in freezer at -18C.
Hot holding of food products at 60C.
All food items stored at least 6 inches off the ground and properly covered.
Chlorine dishwasher achieved a final rinse concentration of 50ppm. Ensure unit is monitored daily with chlorine test strips to verify that it is in good working order.
General sanitation satisfactory and no pest activity noted.
Hand washing stations satisfactory. However, cold water tap for the hand sink by the walk-in cooler cannot shut off properly and needs to be repaired.
Quats sanitizer placed in food preparation area and concentration was at 200ppm.
Dry storage area satisfactory.
Heavy black grease noted within the hood vent of the pizza oven. Ensure the vent hood is cleaned frequently to prevent grease fire.
As a reminder, all FOODSAFE Level 1 certificates issued prior to July 2013 will expire in Aug 2018. Ensure staff members renewal their FOODSAFE Level 1 certification and maintain a photocopy onsite.
