- General sanitation - good.
- Sandwich prep cooler was at 3.7C (top) and 2.6C (bottom).
- Under counter coolers were at C3.4.
- Egg cooler at 4C.
- Back cooler was at 3.6.
- Dairy dispensers were at 4.0C.
- Walk-in freezer - satisfactory (-14C).
- All hot holding >60C.
- Thermometers for cold units - available.
- Storage - well organized.
- Surface sanitizer - Quats at 200ppm.
- Handwash stations supplied with hot and cold running water, liquid soap, and single use paper towel.
- Quats sanitizer pails labelled and tested at 200ppm. Containers time stamped and changed every 2 hours.
- 3-compartment sink - satisfactory.
- Mixing spoons stored in ice/water mixture.
- Ice machine - clean. Ice scoop stored safely at the time of inspection (away/in container).
- A professional pest control - available on site. Traps are set and empty.
