Observation (CORRECTED DURING INSPECTION): 216 jugs of milk were observed at room temperature (inside 54 cartons) in the back storage room. Manager stated that they received the delivery of new milk 45 minutes ago. They stated that they keep rotating between the milk jugs at room temperature and the milk jugs in the walk-in-cooler and front display fridge throughout the day until the milk gets sold. They stated the extra order of milk is usually done on Thursdays. Milk was at 6 degrees C surface temperature when checked with the IR gun.
Corrective Action(s): Manager moved the new delivery of milk observed at room temperature to the back of the walk-in-cooler and moved the older supply of milk to the front inside the walk-in-cooler during the inspection.

Make sure delivered cold potentially hazardous food (including milk) is refrigerated promptly after it is received at or below 4 degrees C. Do not store or display it intentionally at room temperature (danger zone) using the rotation method described above. It was reviewed that cold potentially hazardous food in the danger zone (i.e. between 4 to 60 degrees C) for more than 2 hours (cumulative time) is required to be discarded.

To prevent this issue from reoccurring, either obtain another refrigeration unit that can be maintained at or below 4 degrees C to keep cold potentially hazardous food (milk) stored at or below 4 degrees C or order enough milk supply so that it can be refrigerated inside the existing fridges at 4 degrees C or less of the retail store until it is sold to customers. A follow up inspection will be conducted next week.

Food Store:
-Refrigeration units were at or below 4 degrees C.
-Freezers were at or below -18 degrees C.
-Pest control program via Steritech was in place. Most recent service was conducted today based on the pest control report.
-No signs of recent pest activity were evident at the time of the inspection.
-Baby food products were checked randomly. Of the supply checked, none were past their expiration date.
-Cans did not appear dented or bulging in the store section at the time of inspection.

Back Room:
-Upright cooler was at or below 4 degrees C.
-Walk-in-freezer was at or below -18 degrees C.
-Walk-in-cooler was at 4 degrees C.
