Observation (CORRECTED DURING INSPECTION): A large bucket of soup stored inside the 2 door cooler measured with an internal food product temperature of 8.5C. Operator stated it was cooked last night.
Corrective Action(s): The large bucket of soup was discarded. For proper cooling procedure, soup must be cooled down from 60C to 20C in 2 hours, then 20C to 4C in 4 hours. Divide the large bucket of soup into shallow and smaller containers to facilitate cooling.

- Stand-up and chest freezers at -18C.
- Hot holding units not in use at the time of inspection.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm bleach sanitizer available in pails with wiping clothes stored inside.
- 100 ppm bleach sanitizer dispenser from the low temperature dishwasher.
- Ice machine and ice scoop maintained in sanitary condition.
- Food stored off the ground.
- No pest activities observed at the time of inspection.

*Maintain temperature records for all refrigeration units on a daily basis.
