Observation: Facility has sealed holes by the 2 compartment sink. One tin cat was observed to have 6 dead rodents (glue board was dated Nov 2016). Droppings are still being observed by the 2 compartment sink, brown shelving unit by the walk-in cooler, and metal shelving unit by the walk-in cooler.
Corrective Action(s): Ensure affected areas are properly sanitized using a bleach solution as discussed during the previous inspection. Facility was last serviced by Canadian Pest Control Ltd on Jan 3, 2017. Facility is on a monthly service contract. Contact pest control operator to re-evaluate pest infestation. In order to prevent pest infestation ensure the following are completed: seal any potential entry points, keep facility clean and sanitary, removed all standing water, all foods are to be stored in pest proof container with tight fitting lids, and provide a 6 inch space between shelving units and the floor (to assess pest activity and to prevent food accumulation). Recommend obtaining a flashlight to check for daily pest activity.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Deli slicer was found to have dried food debris behind the sharpening guard.)
Comments

-Follow-up inspection to December 8, 2016.
-Hot holding of potentially hazardous foods was greater than 60C.
-Did no observe foods stored on ice at the time of inspection.
-Deli slicer was being used at the time of inspection. Staff disassemble slicer after each use for cleaning and sanitizing after each use.
-Light shield has been replaced.
-Chemical spray bottles were properly labelled at the time of inspection.
