Observation: Cooling units observed with old cardboard on bottom of unit. Door handles on same observed with minor build up of hand prints. Contamination points. Food debris and related build up noted.
Also food debris noted in freezer unit.
Corrective Action(s): CLean up noted areas as discussed. Discontinue use of carboard in coolers as tool to avoid cleaning. Use in dry food only if they are replaced daily. Should not substitue daily regular cleaning schedule.

Comments

Somewhat improved storage shelves and work surfaces by applying a topping to surfaces. This is temporary and will need a more permanent solution. OK for now. Generally, much cleaner throughout premises.
Cooling units all below 4 C.
Freezers at - 20 C. or more.
Dishwasher measuring at 76 C at plate. Thermolabel reacted. General sanitizing good and sanibucket at 100 ppm.
