Comments

-Ensure that the ice machine is cleaned monthly. Hand sinks supplied with hot and cold water, soap and paper towels. All coolers were < 4 C. All freezers were < -18 C. Quats sanitizer was tested at 200 ppm. The dishwasher had 50 ppm chlorine. The glasswasher had 50 ppm Iodine. Ensure that this is adjusted to the recommended range of 12.5-25 ppm Iodine. General sanitation was satisfactory.
