Observation (CORRECTED DURING INSPECTION): Two knives were found to have food debris from previous use.
Corrective Action(s): Ensure all equipment is properly washed and sanitized after each use. Some equipment may require additional presoaking to loosen food debris. Knives were washed and sanitized in the dishwasher at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 2C (top and bottom).
-Upright cooler was at 4C.
-Bar cooler (dairy) was at 4C.
-Upright freezer was at -18C.
-Chest freezer was at -15C.
-Chicken and lamb cooked to greater than 74C/71C on the grill.
-Rice reheated to greater than 71C.
-Hot holding was greater than 60C (potatoes reheated to greater than 71C and hot holding unit was preheated to greater than 60C).
-Hot potentially hazardous foods cooled in a rapid manner (lamb, potatoes, and rice) were less than 4C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Bleach sanitizer pail labelled and tested at 100ppm. Operator stated the sanitizer is changed every 30 minutes.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Ice machine was clean and well maintained.
-Potato cutter blade and hand piece cleaned after each use and disassembled for thorough cleaning and sanitizing at the end of the night.
-General food storage practices good at the time of inspection. Foods stored covered and protected from potential contamination. Raw meats stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection. Operator is keeping the same pest control operator for the time being, but may potentially change pest control operators.
-Washroom clean and well maintained.
-Operator FoodSafe Level 1 valid until September 2, 2020.
-Health Permit hand delivered to operator. Ensure permit is posted in a visible location.
