Corrective Action(s): Facility has Pest Control Technician servicing facility monthly. Discuss current fruit fly infestation with Pest Technician. There are traps available for use that Pest Technician can place in areas of high activity. Pest Technician should also be providing facility with recommendations suited to the space. Recommendations will be specific to the type of pest and the facility.

- Facility in EXCELLENT sanitary condition - WELL DONE!
- Pest control program in place
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 72 (74) Degrees Celsius at the dish
- Glasswasher achieving final sanitizing rinse of greater than or equal to 72 (77) Degrees Celsius at the glass - island coffee area
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT

- FoodSafe Certified staff present during inspection
- Trays wiped with sanitizer solution between customers

NOTE: While food is being prepared ice bath is used. After ingredients are finished the items are then moved back into cooler unit (i.e. large scale production of sandwiches, salads, etc.)
NOTE: Facility utilizing time tracking for potentially hazardous food items held at room temperature. The bacon and cheese croissant is being time recorded. All other potentially hazardous food items are held in cooler unit. EXCELLENT WORK
NOTE: Facility has obtained and installed stainless steel low walls that are put in place at end of night both in bar and in main kitchen to prevent against the entry of rodents. EXCELLENT WORK. Rodent infestation appears to have been reduced if not eliminated at facility. Continue to monitor for pests as colder months are coming and facility is open to main atrium in mall without much protection from pest entry. These metal guards will be needed in the coming months.
