Routine check of Evergreen Heights kitchen:
Hot and cold water is provided. The back hand washing sink (by the office) has mixed hot and cold water and should be adjusted to make it warmer.
Hand sink at front kitchen by door has mixed warm water.
Liquid soap and paper towels are available at both hand sinks..
Reviewed procedures for cleaning and disinfecting the meat slicer. Provide a designated brush to clean the back of the blade.
Quats sanitizer is used (200ppm).
Coolers are at 4 C /40 F or colder. Temperature records are being kept. Note that some of your thermometers who "green" safe zone as being 5 C but 4 C is required.
Hot holding soup was at 60 C or hotter.
Dishwasher has a hot water sanitizing rinse (71 C / 160 F or hotter measured inside the machine). Records show 180 F measured at the gauge.
