Observation (CORRECTED DURING INSPECTION): Sanitizer bottle and sanitizer bucket found at 50ppm QUATS. Needs to be at least 200ppm QUATS. Low concentration of sanitizer allows for survival of harmful microorganisms on food-contact surfaces that can contaminate food being prepared.
Corrective Action(s): Operator told to frequently replace bottle and bucket contents with sanitizer from back prep area, which is at 200ppm QUATS.
