Observation: Food spills, grime, grease buildup observed under coolers, counters and grill. Utensils and kitchenware are not kept in a sanitary manner.
Corrective Action(s): Deep clean the entire kitchen. Pull out large equipment and scrub. Clean food spills, grime and grease buildup near the grill. Remove items not belogning to the kitchen out of the food preparation area. Organize items on shelves.

Prep coolers, upright coolers measured <4C. Thermometers in place.
Chest freezer, upright freezers measured <-18C.
QUAT sanitizer available.
No dishwasher as foods are served in disposable containers only.

Following corrective actions need to be implemented by August 23, 2021:
Label the sanitizer bottle.
Handsink in the back was out of soap. Place hand soap near the handsink (as opposed to opposite side of the handsink) to encourage proper handwashing.
Obtain proper scoops with a handle for scooping sauce and dry ingredients (rice).
Store rice scoop in ice bath at all times to prevent potential bacterial growth.
See the violation noted above and clean & sanitize accordingly.
Remove all cardboard box lining on shelves. Shelf lining shall be of material that is easily cleanable.
