304 - Premises not free of pests [s. 26(a)]
Observation:
Found mice droppings along the base of walls, under platforms and on lower shelving units. Dead mice found in the metal tin traps. This is a clear indication that there is a large mice infestation.
Corrective Action(s):
Eliminate the mice infestation by:
1) Increase the frequency at which the professional pest control company monitors and services the premises. Trapped mice shall be removed daily by the pest control company.
2) Seal all openings in walls, floors and ceilings around pipes, wires, and duct vents with metal mesh (openings 1/4" or smaller) or metal covers. Remove the aluminum ducting tape, as this will NOT stop or prevent mice entry and it is not durable to withstand daily cleaning and abuse.
3) Install floor drain covers to all floor drains. Ensure the openings are not bigger than 1/4" Replace any damaged or missing floor drain covers.
4) Firmly stuff all small openings or cracks with steel wool and then seal with expanding foam.
5) Follow and complete all recommendations made by the professional pest technicians in their reports and/or in their discussions with you.
6) An inspection of the full facility (interior and exterior) should occur by the pest company, to determine other entry points and harboring areas. Treatment to all active mice infestation areas shall occur.
7) Forward a copy of the pest control reports to our office for review until the mice infestation is eliminated. (lynda.quan@fraserhealth.ca).

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
There is a space at the base of the door in the dishwashing area, leading into the hallway. Pests, entering from other areas of the building can access the kitchen area this way.
Corrective Action(s):
Install a door sweep or door guard at the base of the door to prevent the entry of pests into the kitchen area.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Found moderate amounts of rodent droppings along the base of all walls, under platforms & tables, and by drain pipes. This is even with staff cleaning at the end of the night, and in the morning again. The droppings and urine have bacteria and viruses in it, and the oil from the mice act as an attractant or tell other mice the safe areas to navigate.
Corrective Action(s):
Increase the frequency detailed cleaning is done to a weekly basis to remove the droppings, urine and mice oil deposits. The use of hot water, soap and a steam cleaner will greatly help in keeping the kitchen environment clean, and discouraging the mice from coming around.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -14C or colder; hot holding units above 60C; thermometers present; temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher rinse cycle had a temperature of 71C at the plate's surface.
- Quats sanitizer had strength of 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins separate or below RTE foods; and all foods stored 6" off the floor.
- No indication of food damage by mice, during the inspection. However, ensure all foods are stored in hard plastic, or stainless steel containers to prevent access.
- General sanitation level is good. But improvement needed in the frequency of detailed cleaning to help eliminate the mice infestation and bacteria & viruses. Improvement needed in the mentioned areas.
- FoodSafe certified staff present.
- No expired foods in use. FIFO rules being followed.
- Remove the aluminum duct tape, as that will NOT stop or prevent the entry of mice. The mice will easily push through the tape.
- Exhaust canopies and filters are clean. Professional cleaning due in June 2020, as per the service sticker.
- Ensure all pooling water is mopped up or pushed into drains at the end of the day to eliminate a water source for the mice.
