- Hand delivered "Health Permit to operate" - posted in conspicuous location at time of inspection
- Hand sink properly working and stocked with liquid soap and paper towels
- Bleach available as sanitizer (solutions measured >200ppm)
~ Use 100ppm dilution as chlorine was too strong (bleaching out test strip)
- High temp. dishwasher reached 75.2C (plate surface)

Temperature checks:
- Upright cooler at 2C to 4C (ambient temp.)
- Upright freezer at -21C (ambient temp.)
- Prep line cooler at 3C to 4C (ambient temp.)
- Small freezer (fries / onion rings) at -14C / -15C -- monitor and ensure it reaches -18C
- Cooler by the cooking area at 4C
