Comments

- Premises and equipment were maintained in sanitary condition. Sanitation along edges of floor has improved since previous inspection.
- Handsinks (3) were supplied with liquid soap and paper towel. Observed frequent handwashing by foodhandling staff.
- Coolers and freezer were operating at required temperatures (4C or colder, -18C or colder)
- Temperatures checked:
- Walk-in cooler 1C
- Walk-in freezer -19C
- Single door reach in coolers 2C, 4C
- Line cooler 2C (lower portion), 3-4C (inserts)
- Undercounter freezer -18C
- Beverage coolers 3C, 2C
- Temperature inside holding unit was >60C. Door of hot holding unit able to close securely to maintain temperature. Note: No food present in hot holding unit at time of inspection.
- Food was stored in a food safe manner. All food items were covered/wrapped. Labels present indicating when items were prepared.
- High temperature dishwasher operational and final rinse met required sanitizing temperature (71C or higher at dish surface). Rinse temp. at dish surface: 73.7C
- Quats sanitizer (200ppm) present from dispenser at 3 compartment sink. Quats test strips present.
- In use wiping cloths kept in quats sanitizer solution in sani pails. Concentration of solution maintained at 200ppm. Solution replaced every 2 hours. Labels present indicating time to be changed
- No signs of pest activity observed at time of the inspection. Pest control contract in place with monthly service.
