Observation: Prep cooler is 2 degrees C below and maintaining foods in inserts on top at 5 degrees C.
Corrective Action(s): Ensure that foods in line cooler are maintained at 4 degrees Celsius at all times. Monitor carefully and adjust or repair as needed.

Observation (CORRECTED DURING INSPECTION): Spray bottles of sanitizer were measured and found to be less than 150PPM quat residual.
Corrective Action(s): It was manually mixed and still not adequate until it was mixed with a new bottle of concentrated Quat. This is a repeat issue. Once manually mixed following manufacturers instructions with a new bottle, 200 PPM Quat was achieved. Operator to have dispenser checked by chemical company. All dispensing of sanitizer MUST be checked with test strips.
