Observation (CORRECTED DURING INSPECTION): Fabric wiping cloths that are used to wipe food contact surfaces were observed stored on the cookline table
Corrective Action(s): Ensure wiping cloths are stored in an appropriate sanitizer solution bucket: 200ppm quats. This will prevent the spread of bacteria from using soiled wiping cloths stored at ambient temperatures. Date to be corrected: immediately

-Routine Inspection
-Handwashing sinks contain hot and cold running water, liquid soap, and paper towel. Ensure hands free garbage bins are nearby
-Coolers measured 4C or less
-Freezer measured -18C or less
-Hot holding not in use at time of inspection. Ensure equipment reaches above 60C measured with thermometer prior to using
-Ice machine is clean and scoop is stored in a sanitary manner
-General sanitation is satisfactory
-Quat dispenser, buckets, and spray bottles measured at 200ppm quats
-Dishwasher measured above 71C at plate level
-No signs of pest infestation. Ensure to keep fruits in covered container and do not leave out uncovered in ambient conditions for extended periods of time
-Foods covered and protected from contamination. Do not store food contact surfaces directly on floor. Have another cleanable material stored underneath food contact surfaces on bottom shelf
