Observation (CORRECTED DURING INSPECTION): Dicing cutter for veggies found unclean with green pepper debris within grooves; harmful pathogens could survive and grow in food contact surface, which could lead to biological contamination.
Corrective Action(s): Clean and sanitize all food contact surfaces after use, every four hours, or as needed going forward.

Observation: Old rodent droppings found in the corner between the grease trap and three compartment sink.

Observation: Pizza prep cooler table measured ambient temperature of 11.6 degrees Celsius upon inspection. This piece of equipment must be capable of maintaining foods at or below 4 degrees Celsius. Discussed foods in cooler with Operator - they had been there for less than 2 hours - Operator moved items to walk in cooler (which holds below 4 degrees Celsius).
Corrective Action(s): Have cooler repaired. In the meantime do not store foods in prep cooler for longer than 4 hours (i.e. ensure inserts have portions that will turn over within four hours and no more). Operator made appointment for cooler to be repaired by Tuesday, August 9th, 2016.
