Observation (CORRECTED DURING INSPECTION): Dishwasher did not meet sanitizing requirements. Final rinse temperature at the plate 62.8C, 70.1C, 70.1C (ran three times). Temperature reading on final rinse temperature gauge at 75C. No chemical sanitizer on-site. Operator ran dishwasher an extra three times. Final rinse temperature at 73.1C at the plate. Ensure to monitor the final rinse temperature at the gauge (should be 82C).
Corrective Action(s): Provide a method of monitoring for final rinse temperature. (eg. thermometer with a maximum temperature readout or thermo-labels for dishwasher with maximum temperature indication).

-Premises maintained in sanitary condition.
-Handsinks in kitchen and in public washroom supplied with liquid soap and paper towel.
-Coolers operating at acceptable temperatures (4C or colder):

-US refrigerator double door cooler 4.6C
-Prep table cooler top 1.1C/bottom 1.6C
-Walk-in cooler 1C
-Sliding door cooler 6C (no potentially hazardous foods noted)
-Freezers functional and maintaining food in a frozen state:
-Undercounter freezer -17C
-Walk-in freezer (upstairs) -6C/-22C
-Foods were removed from hot holding temperatures at time of inspection near closing time. (Rice cooled using ice)
-Sous vide cooking of eggs was not occurring at time of inspection.
-Quats sanitizer (200ppm) present in spray bottles for use with wiping cloths to sanitize food contact surfaces.
-No signs of pest activity noted at the time of the inspection. Pest control contract in place with monthly service.
**containers of beverages were stored on the floor upstairs and along the stairs going up. Ensure to store these at least 6" above the floor.
