302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
- 3 Compartment sinks were empty and plugs were unavailable. Operator not aware of the 'wash, rinse, sanitize' dishwashing steps.
- Slicer used for turkish delights observed with sticky residues. Operator stated they were not used today.
- No sanitizer available for food contact surfaces.
Corrective Action(s):
- Operator was able to find one plug for the saniziting sink and filled up the sink with warm water and bleach to make 100ppm bleach sanitizer solution. Ensure all food equipment and tools are sanitized after washing and rinsing procedure.
- Clean and sanitize the slicer. Ensure to clean and sanitize all equipment immediately after usage.
- 200 ppm bleach sanitizer was made in empty bottle and was labelled as sanitizer. Ensure to use this spray to sanitize all food contact surfaces after cleaning.

Comments

- Store does not sell perishable food items.
- All handsinks are fully equipped. Replenish the soap dispenser located in the roasting room.
- Food items are stored > 6 inches off the floor.
- Sanitation is maintained in the front area. Metal scoopers and dry goods containers in sanitary condition.
- Raw dry ingredients are supplied from the Ayoub's warehouse located in Langley - Invoices are available.
- Cooler ambient temperature in the kitchen measured at 6 degrees Celsius. Only dry goods are stored inside. Ensure to adjust the temperature to 4C or below before storing any perishable food items in the cooler.
- Store is managed by All Green Pest Control company monthly. Recent report suggests to repair the back door as it has gaps that allow pest entrance. Operator stated the bottom part of the door gets crumbled and door sweep cannot be installed; repair or replace the door to fill up the gap.

* Place a garbage bin inside the back kitchen as there is no bin to discard used paper towels after handwashing.
* Purchase a chlorine test strip to ensure sanitizer is 100 ppm when making sanitizing solution for dishwashing. For spray bottles, mix 1 tsp of bleach with 1L of water to make 200ppm chlorine sanitizer.
