Premises pretty well organized and cleaner at time of inspection.
**Target corner of floor behind cookline deep fryers - grease is accumulating back there.
**Mop sink enclosure is a bit stinky. Deodorize as best you can and periodically spray chemical cleaners in space to prevent pest breeding.
No sign of pest activity so very good.

Cooling units less than 4 C.
Freezer below -18 C
Handwash stations stocked and OK.
Dishwasher at 77 C. At plate.

Quats sanitizer in spray bottle in kitchen area kept under sinks. Due to the amount of raw meat and cooked meat prep in same areas in kitchen it is important to sanitize frequently. Keep the spray bottle on counter in prep areas as discussed.
**Concentration of spray bottle in kitchen 500+ ppm Quats. Diluted to 200 ppm range. Make sure to label bottles and figure out a reliable dosing system to keep solution at 200 ppm range. Front spray bottle was at 200 ppm.
