Preparation cooler inserts at or below 4 degrees C. Lower section at or below 4 degrees C.
Back kitchen hand sink provided with liquid soap and paper towels.
200ppm quats available for use in containers throughout premise. Reminder to store wiping cloths in this solution when not in use.

Dishwasher registers 82 degrees C at the plate surface during the final rinse cycle.
