Observation: Fresh eggs are cracked and stored in large containers for multiple egg dish orders. Pooling of eggs for multiple of orders of food increases the chance of Salmonella contamination. Provided BCCDC information for pooled eggs.

Routine inspection conducted and the following were noted at the time of inspection:
All cooler units less than or equal to 4C.
Walk-in freezer at -11C.
Hot holding temperature for food products were at least 60C.
All food items stored at least 6 inches off the ground
No pest noted.
High temperature dishwasher achieved a temperature greater than 72C for multiple cycles.
All food items properly covered.
General sanitation is good.
Storage area organized.
The bakery area is used as additional food preparation space. Cooling of meat sauce satisfactory as internal temperatures were less than 4C.
Steak products not tenderized.
