When cooling large amounts of gravy ensure it cools from 60C to 20C within 2 hours, 20C to 4C within 4 hours. Break down into smaller portions to ensure quick cooling. Cooling foods too slowly can lead to potential foodborne illness.

When thawing foods ensure they are placed into cooler after a max of 2 hours at room temperature. Thawing foods in refrigerator is the safest method of thawing.
