Comments

- Handwash station provided with hot and cold water, liquid soap and papertowels.
- Coolers: <4 deg C
- Chest Freezer: -23 deg C
- Food storage practices appear satisfactory - storage is organized, food is protected from contamination.
- 100 ppm chlorine bleach sanitizing solution available. Chlorine test papers available to verify sanitizer concentration.
- Cleaning and sanitizing procedures as well as "clean-in-place" procedures reviewed with operator for meat slicer parts and conveyor unit. No concerns noted.
- Meat slicer and food equipment appears maintained in a sanitary condition.
- General sanitation of premises appears satisfactory. No pest activity noted.

Note:

1. Operator repackages processed meats (Beef Pepperoni, Beef Mortadella, Beef Hot Dog, Beef Sausages). Meats are manufactured at Arctic Meats & Sausage located in Port Coquitlam, B.C. using Nika Food's recipes. Spice mix for the meat products are mixed and packaged onsite at premises and provided to Arctic Meats & Sausage to use for recipes. Bulk packages of processed meats are then shipped to Nika Food and repackaged at the premises for sale to retailers. No repackaging occurring at time of inspection.

2. Operator advised that business is looking into purchasing a large scale slicer and packaging unit that will take up a large portion of the processing area. Unit may require plumbing connections. Equipment must be able to be properly cleaned and sanitized. Please provide equipment information and a written proposal to Fraser Health for review before purchasing and installing machine. Updated floorplans and Health Approval will be required. **Written Approval from Fraser Health is required before making any changes to the existing operation or floorplan/ equipment layout.
