On Follow-Up:
-Cleaning issues have been addressed.
-A new sliding glass door cooler has been purchased. The temperature of the unit is 3 degC.
-Rice containers have all been washed and are clean.
-Manager has talked to staff about using tongs to handle foods.
-New metal shelving have been purchased for the walk-in cooler. Great.



Outstanding items:
-Buy proper scoops. Don't use measuring cups. Store scoops with the handle pointing up so that it's not touching the food.
-Operator has talked to the pest control technician and asked them to service for cockroaches as well.
-Get your exhaust hood serviced 3 times a year instead of 2. Last service date was April, 2018. Get it serviced again in August of this year.
-Buy lids for the inserts if you don't have enough so that foods in the walk-in cooler can be covered.

REMINDER: STORE VEGETABLES ABOVE RAW MEATS.
