Follow-up inspection conducted.
- Bleach sanitizer solution available at 200 ppm (chlorine residual). Wiping cloths were stored in sanitizer solution in between uses. Good. Reminder to make this sanitizer solution at the start of each operational day, and change the solution throughout the day (every 2-3 hours).
- Walk-in cooler has been re-organized such that raw meat/poultry/seafood containers are now stored below ready-to-eat items and vegetables. **Please continue organizing the walk-in cooler and ensure there is adequate space for storage on the racks.
- Deep cleaning around cooking equipment and chopping block/knife rack has been completed. *As discussed, ensure deep cleaning in all areas is done once a week at a minimum.
- Reminder that the back screen door must be closed if the back door is open.
