Observation (CORRECTED DURING INSPECTION): Container of tomato basil soup measured at 45C stored in walk-in cooler. It was left in cooler one hour ago
Corrective Action(s): - Reheat the soup to 74C or above.
- Always cool hot foods from 60C to 20C within two hours and from 20C to 4C with in 4hours inside cooler
- Portion out large batches, use shallow pans, stir occasionally and use ice bath/ice wand to help cool faster

- Handwashing station at three compartment sink, staff washroom and front servery are supplied with hot and cold running water, soap and paper towel
- Coolers - walk-in cooler, upright desert cooler, two prep coolers, line coolers and milk cooler are measured at less than 4C
- Walkin freezer is measured at -19C
- Hot holding units are measured at greater than 60C
- Food contact surface sanitizer is measured at 200ppm quats concentration
- Dishwasher is dispensing 50ppm chlorine residual solution during final rinse cycle
- Food storage practices are satisfactory
- No evidence of pest activity is noted
- Foodsafe certified staff is available in kitchen
