Observation: Dishwasher final rinse cycle sanitizing temperature measures 69 C. The final rinse cycle must measure at least 71 C.
Correction: Adjust the booster heater to achieve a final rinse temperature of at least 71 C.
Comments

Well maintained and operated. Sanitation is very good. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. Hot-holding measures > 60 C. Dishwasher final rinse sanitizing cycle measures 74 C. Spray sanitizer measures 200 ppm Cl. Wiping cloth (chemically treated Quix Plus sanitizing towels are in use) sanitizer measures 200 ppm Q. No recommendations.
