Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels. Note: A disposable bottle of liquid soap was available at one of the handsinks as the batteries for the liquid soap dispenser need to be replaced -correct this today.
Walk-in-cooler and display coolers were 4 degrees C (40 degrees F) or colder.
Walk-in-freezer and display freezers were -18 degrees C (0 degrees F) or less.
Fish on ice was below 4 degrees C.
Seafood in the tank water was 4 degrees C (40 degrees F) or less.
Refrigeration units were equipped with thermometers.
Temperature records were being maintained.
Tags for shellfish over the past three months were available. The manager mentioned that they keep the tags up to 1 year.
200 ppm QUATS sanitizer was available in the bucket and the dispenser.
Ice machine was in a clean condition and the scoop was stored separately.
A pest control program via Steritech for TNT & the food court was in place on a monthly basis. Pest control reports were available in binders in TNT's office.
The food safety plan and sanitation plan for the seafood department was available in office area as well.

NOTE: The operator was previously using 3 bins to wash, rinse, and sanitize trays. They will be installing a 2-compartment sink next to a 1-compartment sink with the QUATS dispenser tonight according to the manager. In addition, they will be upgrading to new display coolers next year and no changes to the floor plan have been proposed. Ensure the new commercial display coolers used in the future are able to maintain a temperature of 4 degrees C or less and any new display freezers are maintained at -18 degrees C or less. A follow up inspection will be conducted regarding the installation of the 3-compartment sink.
