Observation: Small stand up cooler in side storage room was 9 degrees Celsius.
Correction: Coolers shall be capable of maintaining foods at 4 degrees Celsius or less. Instructed operator to transfer foods to another cooler, and adjust thermostat or service the stand up cooler to ensure it is capable of maintaining foods at the correct temperature.

Follow up inspection
Small stand up cooler is not in use as it is not yet capable of keeping foods at 4 degrees Celsius or less. Operator is using other coolers to store the food. Appointment with technician has been made to service the cooler.
In use wiping cloths are stored in bleach sanitizer (200ppm). Smaller containers are used for the bleach solution and are kept on the counter beside/at food preparation areas.
Paper towel holders provided in sushi bar.
