- Manual Dishwashing: 4 Step Method. (Quat Sanitizer)
- Wiping cloth storage: Quat based. ( ~ 200 ppm.) Ensure all food contact surfaces are washed and sanitized after use or on a timely manner. Dispensing equipment is required to be kept clean. (ie: storage containers/pump dispensers) Test strips on site. Monitoring required. All items are to be stored in a sanitary manner.
- Food/Chemical Storage: Ok.
- Sanitary Facilities: Single use towels are required to be kept inside dispensers at all times.
- Sanitation: Refer to Violation Notes.
- Structurally: Ok.
- Garbage, Recycling and Composting: Discussed.
- Staff Hygiene: Discussed.
- Pest Control: No signs noted this date. Store monitoring program in place.
