Observation (CORRECTED DURING INSPECTION): Hot held rice at 58C, hot holding unit set to low at the time of inspection. Rice was prepared approximately 1 hour ago.
Corrective Action(s): Operator changed heat setting to high at the time of inspection and temperature was observed to be above 60C. Ensure to keep hot holding unit at high setting and to keep a temperature log of the hot holding unit.

Observation (CORRECTED DURING INSPECTION): Chemical dishwasher had a final rinse of 0 ppm chlorine on dish surface.
Corrective Action(s): 1) Only serve customers with single use utensils until chemical dishwasher can be repaired or replaced.
2) Use alternative method of dishware cleaning for kitchen utensils until chemical dishwasher is fixed.
3) Ensure to update the sanitation log going forward.
