Routine Inspection:
-All hand sinks equipped with hot/cold water, liquid soap, paper towel.
-Ice machine kept cleaned. Operator started scheduled to be cleaned monthly. Scoop stored properly.
-100 ppm bleach solution available to use after correction.
*Note: Obtain test strips to verify concentration.
*Reminder: Always store wiping cloth in sanitizer solution.
-Dishwasher registers 50 ppm chlorine in final rinse cycle.
-Walk-in freezer at or below (18C).
-Stand up cooler at or below 4C.
-Under counter cooler at or below 4C. Probed meat at 3C.
-Prep inserts range between 4-5C. Operator stated food used within 2 hours.
*Reminder: Fill inserts halfway if not used frequently.
-No signs of pest noted during inspection.
-Overall sanitation very good.
-Food Safe requirements met during inspection.
-Permit posted in plain view of public.
