Observation (CORRECTED DURING INSPECTION): Low temp mechanical dishwasher was used primarily for dishwashing. However, 0ppm chlorine residual recorded during inspection that may result in inadequate sanitation of the dishes/utensils. Kitchen manager stated that take-out containers will be used for serving lunch until the dishwasher has been repaired. However, dishwasher was repaired during inspection and all the dishes run again through dishwasher.
Corrective Action(s): Ensure that all food contact surfaces are adequately washed and sanitized to prevent the risk of bacterial growth and foodborne illness.

Observation (CORRECTED DURING INSPECTION): Low temp mechanical dishwasher was not dispensing sanitizer solution. The concentration of chlorine residual recorded at 0ppm. Kitchen Manager was aware of the issue and stated that one of the pieces requires replacement and have been ordered. Technician was called and dishwasher was repaired during inspection. 50ppm chlorine residual recorded during rinse cycle.
Corrective Action(s): Ensure that all equipment are maintained in good working order at all times.

Comments

Routine inspection conducted.

Observations:
- Temperature of stainless steel cooler at 3.2C
- Freezer at -14C
- 2nd stainless steel cooler at 2C.
- No hot holding at the time of inspection.
- Temperature logs were found up to date. Good.
- Handwash sink available and equipped with hot and cold running water, liquid soap and single use paper towels.
- 200-400ppm QUATS solution recorded in spray bottle.
Please follow manufacturer's instructions for mixing the sanitizer. To prevent the risk of chemical contamination of food, ensure that the concentration of QUATS does not exceed 400ppm.
- 2 compartment dishwashing sink present.
- Low temp mechanical dishwasher used for dishwashing. See violation above.
- Food storage practices were found satisfactory.
- No signs of pest activity observed.
- Kitchen Manager has valid FOODSAFE Level 1 certificate (Exp Aug 2027)
- Operating permit posted.
- Generally, a well maintained facility.

NOTE - Facility is planning to switch to liquid bleach solution instead of solid chlorine pellets for sanitizing step of low temp mechanical dishwasher. Please notify your district EHO when the new dishwasher is in place.
