Refrigeration unit was at or below 4 deg C.
Dishwasher sanitizing rinse reached 75 deg C at plate surface.
Quats sanitizer measured >400 ppm. Make adjustment to the dispenser so that it is at 200 ppm (as per manufacturer's instructions).
Full time cook has valid Food Safe 1 certification.
Permit posted in the kitchen area.
Back area:
New large freezer was at -18 deg C.
Small black freezer was at -18 deg C.
Dry storage shelving unit was full.
May require more shelving units for donated food items.
Some organization required in the dry storage area.
General sanitation of kitchen was satisfactory at time of inspection.
Note: Ensure food temperature log is up to date.
Some construction being done in the modular but kitchen area not affected.
