302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer is available for use. Staff had prepared a sanitizer solution during the time of the inspection, and it had >200ppm, mixed with soap content remaining in the bottle. 200ppm chlorine was reprepared at this time. Staff was asked to sanitize all prep surfaces using this solution at this time.
Corrective Action(s): Ensure 1/2 tsp of bleach is added per 1L of water. Ensure all staff is trained to use the sanitizer solution to sanitize all food prep surfaces BEFORE initiating any food prep in kitchen, after EACH possible contamination and EVERY 2 HOURS during operation.

Observation: 1) Various cooked foods stored in metal containers being stacked on top of another without protection in between in walk-in cooler.
2) Opened cans of fruits stored in stand up cooler by the kitchen entrance.
Corrective Action(s): Ensure all foods are stored in food grade containers, properly covered. Do not stack food containers on top of another without providing protection in between as this would contaminate the food underneath.

Transfer all opened can foods to food grade containers. Acidic foods (i.e fruits/tomatoes) in open cans may result in chemical leach, and contaminate the food.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Heavy accumulation of food debris and grease build-up observed from the following areas:
-All surfaces of kitchen equipment (i.e. stove, coolers, counters, sinks), including all sides/tops/behind/handles
-Floors underneath/behind equipment (i.e. stove/coolers/dishwasher)
-Inside coolers/walk-in coolers/freezers
-Floor underneath bar sink
Corrective Action(s): MAJOR CLEANING IS REQUIRED, especially for the mentioned areas above.

Observation: Back prep sink requires a new seal.
Corrective Action(s): Ensure to have the seal redone.

Observation: Different types of cleaning and sanitizer solutions stored in 'method' cleaner bottles. None of the bottles were labelled.
Corrective Action(s): Ensure to label each bottle accordingly. Otherwise, obtain new spray bottles from dollar stores and label each.

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory. Thermometers available.
-High temperature dishwasher achieved 74.8'C at the plate level after final rinse.
-Washroom handsinks satisfactory.
-No evidence of pest activity observed at this time.
-Professional pest control company contracted for monthly visits. Recent report checked. Holes were sealed. Good.

General maintenance and sanitation require improvement. Refer to above.
