304 - Premises not free of pests [s. 26(a)]
Observation: New mice droppings noticed in the dry storage area ( underneath the shelves), behind the double sink and behind the double door refrigerator and many other areas of the restaurant. A licensed pest control company is monitoring and controlling rodents twice a week.
Corrective Action(s): Recommended more frequent cleaing of the old mice droppings and strengthening the trapping program. You must clean the droppings on a daily basis and monitor for signs of infestation. Forward a copy of the inspection report from the pest control provider ( Immediately)

Observation: A number of areas ( gaps between the equipment and floor annd other surfaces) were identified during the inspection. These gaps could provide hiding places for mice.
Corrective Action(s): 1. Seal or patch any holes or gaps that can be patched.
2. Remove all plies of junk from near the back entrance and in the hallway
3. Do not stack pieces of cardboard or old shelving against the wall
4. All coolers including the one in the hallway must be moved for cleaning.
5. Recommneded that all coolers be on wheels for easy moving. (

Comments

A Public Health Act correction order was issued.

According to the operator, cleaning was performed as required under the previous inspection report.
However, a number of mice dropping were still observed especially in dry storage area and behind the stainless steel cooler.

Grease build up still observed along the South wall of the kitchen.

The following sanitation issues must be addressed:

1. Clean all grease build up along the South wall especially behind shelving and equipment
2. Clean floor and wall behind the double wash sink
3. Move all shelving and other items in the hallway near the back entrance and clean thoroughly.
4.. Remove all bags of potatoes and other items from small dry storage room and clean thoroughly
5. Clean underneath the cook line to remove all grease build up.
6. Level the floor and install new floor tiles underneath the hot water tanks ( By Feb 10, 2019). Heavy build up of grease and debris noticed behind the hot water tanks.

All sources of food, water and harborage must be eliminated to control mice.

Failure to address the issues outlined in the report may result in Violation Ticket and/or Closure.
