Observation (CORRECTED DURING INSPECTION): Deep fried egg puff were left in top of the upright storage cabinet to cool
Corrective Action(s): - Time when prepared not known. Temperature at 7C
- All deep fried eggs puff in a bucket were discarded at the time of inspection
- Cool hot foods from 60C to 20C with in 2hours and from 20C to 4C within 4 hours in the cooler

Observation (CORRECTED DURING INSPECTION): - No sanitizer solution was available at the start of the inspection
- All wiping cloth were stored on prep tables
Corrective Action(s): - Fresh prepared sanitizer solution was measured at 200ppm chlorine residual
- Store all wiping cloths in the sanitizer solution

Observation (CORRECTED DURING INSPECTION): Dishwasher was dispensing 0ppm chlorine residual at the time of inspection.
Staff not aware that the sanitizer solution bucket UltraSan has run out
Corrective Action(s): - Replacement available.
- After replacing and priming the sanitizer several times, chlorine sanitizer was measured at 50ppm during final rinse cycle. Run all dishes that has been washed since morning again through the dishwasher

Observation: - Eggs stored in middle shelf in walk in cooler above vegetables
- Several food items not covered in coolers
- Food containers stored on the floor inside walk-in cooler and walk-in freezer
- Food stored in open metal cans
Corrective Action(s): - Store eggs on the bottom shelf in walkin cooler away from ready to eat items
- Cover all food items inside coolers
- Store all items off the floor in coolers. NOTE: Get extra storage racks for walk-in cooler and freezer and ensure all food items are stored off the floor
Once opened, transfer the contents of the metal can to a food grade container for storage
