*Temperature checks:
- Walk in freezer -18 C or below
- Reach in freezer -18 C or below
- Walk in cooler (seasoned chicken, chicken fillet, tender & cole slaw) 4 C or below
- Hot holding units 60 C or above
- Hot holding (chicken tenders) internal temperature 77 C

*Sanitation & Maintenance
- 3 Compartment sink with approved sanitizer (Quats) measured at 200 ppm
- Quats (in buckets) at 200 ppm to clean the food contact surfaces
- Employees following proper food handling practices
- No pest activity at the time of inspection
- Staff & public washroom fully equipped with hand sinks (hot/ cold running water, paper towel & liquid soap)
- Overall premises is maintained in a good sanitary method
