Observation:
- Mouse droppings observed underneath the display coolers. Rodent infestation has been an issue for years.
Corrective Action(s):
- Manager stated that pest control company did service 2-3 times a week. Please work with the mall management to solve the problem.

Observation:
- Food debris built up in the drain in the walk in cooler.
- Grease built up at hard-to-reach area behind the cook line.
- Food processing tables were not in a sanitary condition.

Corrective Action(s):
- The floor and the drain need deep cleaning - scrape with warm soapy water, rinse and sanitize. Date to be corrected by: Dec 13. 2022
- Spray sanitizer on the food processing table after each use. Date to be corrected by: immediately.

Comments

Routine inspection conducted with the presence of Deli department manager.

- Hand wash stations fully equipped with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizer spray bottles and dispenser measured at 200 ppm QUATS.
- 3-compartment sink equipped with drain plugs for washing, rinsing, and sanitizing.
- High-temperature dishwasher stopped working at time of inspection, and currently under repair. Please make sure the plate level temperature reaches 71C after repair**

- Walk-in cooler, Deli display coolers, Cooler inserts for sandwiches, Undercounter coolers all at 4C or below.
- Hot-holding display case at an ambient temperature of 65C. Hot-holding unit for soup at 70C.
- Stand-up freezer units at back of the kicthen at -18C

- Food products stored at least 15cm off the floor.
- Raw products stored separately from cooked and ready-to-eat foods
- Products in walk-in cooler and in prep cooler units were protected from contamination either covered with lids or in packages.

Note: (1) Re-inspection will be conducted to assess general sanitation and rodent activity.
(2) Please keep take-out containers in its original plastic bags to protect from contamination.
