Observation (CORRECTED DURING INSPECTION): Staff observed to not wash hands after handling raw meat and then other food and double washing after using the washroom.
Corrective Action(s): Hands must be washed between tasks and when entering the kitchen (even if they were washed in the washroom).
Discussed with staff.
Consider installing an additional sink that is just for hand washing.

Observation: 1. Food containers in under counter cooler and walk-in cooler stacked on top of one another without lids or covers in between.
2. Leftover canned food is left in the can.
Corrective Action(s): 1. Ensure all food containers are covered with lids or other food grade material (i.e. plastic wrap).
2. Leftover food in a can must be transferred to a food grade container.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings seen in the back storage area and around the buffet station.
Flies seen in back area.
Corrective Action(s): Remove all droppings and sanitize these areas (do not vacuum or sweep droppings). Check for droppings daily.
Consult a pest control company regarding both pests.
Premises should be free of all pests.
Ensure all food is raised 6 inches off the floor and all food is stored in pest proof containers with lids intact.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General sanitation remains to be very poor. Build-up of grease and food debris observed underneath, behind and in between equipment and food storage containers.
Corrective Action(s): Clean all surfaces (equipment, walls, floors) so that they are visibly clean and free of food debris and dirt.
Increase frequency of cleaning.
Correct immediately.

Walk in cooler at 4 C or below.
2 door undercounter cooler 4 C or below.
High temperature dishwasher achieved 71 C during the final rinse.
Sanitizer available - ensure it used to sanitize food contact surfaces such as the butcher block between the different uses.

Premises has resumed buffet service on Sundays. Buffet not in operation at the time of inspection.
Ensure food that is on the buffet line is served for a maximum of 2 hours after which it should be discarded.
Heat all foods to 74 C prior to placing on buffet line, hot hold at 60 C. Hot holding equipment must be preheated prior to using.
