Storage on 2nd Floor: Large chest freezer is at -20 degC; small chest freezer is at -20 degC.
Sushi cooler's at 3 degC.
Prep cooler's at 3 degC.
Display cooler's at 4 degC.
Rice and miso soup were not available at the time of inspection so hotholding temperatures could not be checked.
Three-compartment method of dishwashing being utilized.
200ppm bleach is available for sanitizing. TEST AND REFRESH AS NEEDED REGULARLY.
Hand sink and 3-compartment sink are fully equipped.
Staff has FS Level 1 or equivalent certification (Expiry Feb. 2028)
